Chicken Scallopini My Way
This recipe is so delicious and easy to make that you'll want to make it every week.
Ingredients:
- 4 thin cut chicken breast
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 1/2 cup sliced mushrooms
- 1 shallot minced
- 1/2 cup of all purpose flour
- 1/2 cup white wine
- 1/3 cup heavy cream
- 1/4 teaspoon paprika
- salt and pepper to taste
Place the flour on a bowl, season with paprika, salt and pepper dredge the chicken breasts with flour mixture and shake off excess. Set aside. Heat the butter and oil in a heavy skillet at medium high and brown chicken on both sides. Remove and keep warm. Add mushrooms and shallot to skillet on medium low heat. Brown them and then add the wine to deglaze the bottom of the skillet, let it reduce a little, then add the cream. Stir on high heat for 1 minute. Add chicken to sauce, stir and cover for 5 minutes. Serve and enjoy!
This dish can be served over fettuccine or over rice.
